Nelsons Pudding

1 lb stale bread
3 oz sultanas
3 oz raisins
4 oz brown sugar
half teaspoon nutmeg
grated rind of 1/2 a lemon
2 tablespoons orange marmalade
3 oz melted butter
1 egg. beaten
1 tablespoon dark rum

Soak bread for an hour. Squeeze out water and mush it up until creamy.
Stir in rest of ingredients and beat well together.
Put into greased dish and bake 35 -40 mins.
pre-heated 350.F gas 4.

Sprinkle with sugar and serve hot with own choice, cream, ice-cream etc.
To eat cold give a good sprinkle of sugar.
