Tang cheese dip - simple

good 1/2 oz butter
1 tablespoon plain flour
3 fl oz milk
3 fl oz apple juice
3 oz Cheddar cheese - grated
fresh ground black pepper.

Melt butter over low heat in small pan and add flour.
Cook, gently stirring, for about a minute.
Remove pan from heat and gradually beat in the milk and juice.
Return to heat and cook, stirring constantly.
Gradually adding the grated cheese, until the sauce thickens
Season and put in serving dish.
If allowed to cool, cover dip with a piece of dampened greaseproof to prevent skin forming until mix is cold.

Use raw sticks of vegetables for dipping.
