Tasty cup-cakes - simple

Try these, really lovely.

4 oz s.r.flour
2 oz ground almond
6 oz caster sugar
6 oz marg
3 eggs - beaten
1/4 teaspoon vanilla essence or almond

cream sugar and marg. add essence
gradually add a little flour and ground almond with a little egg until all mixed in


Pre heated oven 325f gas 3 70c 20 mins. approx.

I put this mix in muffin cases (between 12 and 15)and for the children, in the base I pop in 4 little choc chips in some and a small piece of glace cherries in others. Calling them sweet surprises.
Put on tray and cook until a slight press on top is firm. take out and leave to cool.
These freeze very well.

Optional, icing etc on top when ready to eat. cheers Penny

Believe me she will love them. My grandaughter made them here last weekend and took the whole lot home. I said, perhaps there will be too many to take on holiday whereby my son said, oh, we will take them out of your way???????? Let me know what you thinkwhen you have made them.
