Cup Cakes - different

Bskng this morning did a load of cup cakes then decided to do fruity ones for hubby, Tryig something new came up with the following. Gave hubby one for tea and he commented on how nice the cakes were.

4 oz caster
4 oz marg
8 oz s.r.flour
3 eggs, beaten
1 teaspoon vanilla essence
2 large rounded tablespoons of mincemeat ( had some left over )
1 level teaspoon baking powder

cream method adding mincemeat last.
I used muffin cases for a bigger sizre. Made 18

Over 350f. approx 20 mins.
