Cheesecake - Simple

8oz digestive biscuits
4 oz unsalted butter
1 tin condensed milk 397m
half pint double cream. Elmlea is ideal
2 lemons ( juice of two and zest of one. )

Lined with grease=proof 9 in tin

Crush biscuits until like sand,
Melt butter gently and pour over biscuits. mix gently and put into tin. (Put in fridge for hour or a little more,
In a basin. stir creams and juice and zest and mix gently.
Pour gently over biscuits and put in fridge for a couple of hours or overnight.

Done.

This is how I do it, you can sprinkle top with grated chocolate or broken nuts etc, Up to you

Read this a couple of times, might be thick, but where do you put the 1 tin condensed milk 397m????

Just to make it easy. The melted butter seems scarce but it is only to dampen the crushed biscuits so that you can spread evenly to form a base. Just put mine in the fridge. cheers Penny

I will have a go at making this,first off I need a cake tin.I like Lemon cheesecake.

Just eaten some of mine. When you slice, careful of the crumble which is to be served with the cream top. Enjoy. cheers Penny

Thanks, Penny! Sounds good although, because OH doesn't eat anything with added sugar (type 2 diabetes, diet controlled), I'm unlikely to make it just for me. Hence, I buy those neat little supermarket one-portion ones.

I have brought all the things i need to make this,i will take it away and do it in the caravan and Margaret can help me as she will be eating it too :roflmao:
