Hi, everyone - back from my travels and at last got time to sit at PC doing non-essential stuff. Hope everyone's well, dogs and cats included. It's a lovely morning here for dog-walking, I could almost wish I had one! (It's OK, Lucy's not reading this over my shoulder). Had a lovely, idle (apart from shopping) few days at the Belgian seaside last week. The weather was kind to us and we were able to just potter about in the sunshine in between bouts of eating and drinking. Now all the fresh food I brought back with me is gone so I'm waiting for the man from Ocado to arrive with refills for my fridge.
Talking of food, Dita, my favourite potato & cheese bake is like this: Serves 2 - scrub two large spuds and slice them thinly; peel and thinly slice a large onion (optional); slice or grate about 250g of tasty cheese - strong Cheddar, Red Leicester, Double Gloucester or whatever is your favourite. Grease an ovenproof dish with a close-fitting lid and arrange in layers, starting with potatoes on the bottom and ending with potatoes on the top and adding a grind of fresh pepper to each layer (also optional). Put in the centre of the oven at Gas Mark 3/160C and just go away and forget it for at least 2 and a half hours. Turn the oven down a bit and you can leave it for up to 5 hours if someone's stuck in traffic and late for dinner! IME, the longer it sits in the oven, the better it tastes.
