Saw this today and thought worth pssing on.
4 oz golden caster sugar
4 oz softened butter
4 oz s.r.flour
2 eggs
zest of 1 lemon
1 teaspoon vanilla extract
Topping
4 tablespoons lemon curd
Creme Fraiche or icecream
mix the first 6 items until nice and creamy
spoon into a microwave dish
Microwave on high for three (3) minutes, turning halfway through to make sure cooked right thro'
Leave to stand for 1 minute.
Meanwhile heat the lemon curd for 30 seconds in the micro and stir until smooth.
Pour all over the lemon pudding and serve with creme fraiche or icecream .
