2 lb new potatoes
7 oz leeks.. chopped 11 oz courgettes, sliced
5 ml vegetable oil
Black pepper and salt
7 oz mozzarella cheese, chopped
7 oz vegetarian cheese, grated
Sprigs of Rosemary (or pinch of Rosemary herbs)
7 - 8 oz single cream
Mix cheeses together.
Put potatoes in boiling water and simmer 10 mins.
Drain and allow to cool.
Fry leeks and courgettes in the oil gently for about 7 mins. Then place them in the bottom of an ovenproof dish.
Season with pepper
Slice potatoes and place a layer to cover courgettes and leeks
Top with a layer of grated cheese. (save some of the cheese for topping later)
Place sprigs of rosemary on the cheese
Cover with another layer of chopped potatoes
Season with salt and pepper
Top with cream
Cover with foil and bake in oven for 30 minutes.
Remove from oven and top with the remaining cheese
Bake uncovered for 15 minutes.
