SERVES 4
1 red onion, chopped
3 peppers, chopped, mixed colours
4 good sized mushrooms, sliced
pinch basil
6 - 8oz streaky bacon, chopped. 1&1/4 lb pasta shells
1&1/4 lb emental cheese, grated
500gramme creme fraishe
12 cherry tomatoes, halved.
1 tbsp olive oil.
Pre heated oven. 180C 350F gas 4.
Put onions, peppers and mushrooms in large roasting tin
Season and sprinkle with basil.
Pour the oil over and make sure all is coated.
Cook 15 mins. Remove from oven.
Stir in tomato and sprinkle bacon over top.
Cook another 15 mins until bacon is crispy and vegs. soft and tender
Cook pasta until Al Dente (just done) and drain.
Put in large bowl, fold in cheese and creme fraishe
Divide into 4 warm dishes and spoon over the cooked vegs mix.
Sprinke with black pepper.
