3 ripe bananas
2 tablespoons Icing sugar
pinch of salt
1 tablespoon vanilla essence-
-OR 1 tablepoon lemon juice
1 cup of cream
8 pairs of sponge fingers (or similar)
Mash bananas with a fork, lightly stir in the sugar, salt and flavouring. Whip cream stiffly and fold in lighly.
Arrange two pairs of cut sponge fingers (or similar) in 4 tall glasses and heap fluff lightly over tops. Top with sliced banana,
